Tadka Stamp: The Secret Code
Tempering (tadka) is the entry stamp in your Spice Passport. It’s how Indian cooking begins:
1. Heat oil or ghee.
2. Add cumin seeds and/or mustard seeds.
3. Listen for the sizzle and crackle — that’s when the magic happens.
The aroma you smell at this moment is the true passport stamp to Indian flavor.
