Prepare the kitchari by rinsing in a colander. Then, in a heavy-bottomed stockpot, melt the ghee. Add the washed kitchari and sauté for a couple minutes. Then, add the water, along with the kitchari spice mix. Bring to a boil, then reduce heat to low, and simmer partly covered for approximately 20 minutes or until it reaches the consistency of a stew. Add more water if needed. Stir occasionally. Pour in bowls and serve hot. Garnish with ghee and cilantro leaves.

The spice mix and mung dal make a great Kitchari. I ground the spice mix, cooked it in ghee, added fresh ginger and turmeric then the mung dal, added water and salt. The spice mix has a nice balance of flavors.
Smells super fresh! I like that it doesn't have added salt so I can adjust or omit it in the pot, or use this spice for other things, too. Really like the DIY grind, just something a little extra special
Tastes wonderful in the yellow split mung dal and basmati rice. Sweetened w dates, it is breakfast and add more hot spice and it is a great lunch or dinner.
I love this particular spice blend for it's intended purpose, and use it to fill out other flavor profiles as well. Kitchadi is a go-to for me when I'm caught with nothing cooked, or I'm beginning to come down with something and think I might not be able to cook, or when my back is really painful and cooking is an issue. It is so simple, quick-cooking and satisfying, and the spice mix elevates it to delicious. I always have it in the pantry!
I prepare this by using a hand grinder, and grinding the mixture over a pan of heated ghee. Then add some mustard seeds, and at the end a sprinkle of "Best Hing Ever". Then stir it into my cooked rice-dahl combo, with a bit of salt. Yummy!
A Good Mix for Kichadi
I put this mix in a small spice grinder, and grind it over melted ghee in the fry pan, cook for a few minutes, and then added to the cooked Kichadi.
Works good in hand grinder
I put it into a little hand spice grinder & add to ghee in a pan, fry it for a bit, then add some hing, and finally mix it into the cooked rice & dahl.

My family has been making ghee since 1889. Today, my wife, Nalini (aka "The Ghee Lady"), carries on this tradition. She still makes all the ghee and tightens every jar by hand.
We are passionate about bringing you traditional and nourishing foods. It's our labor of love and service to human-kind. Thank you for supporting our small family business.
