Organic Ceylon Cinnamon: The True Cinnamon, As Nature Intended

Once worth more than gold. Still worth the difference.

Three thousand years ago, a gift arrived at the door of an Egyptian temple. Not gold. Not silk. Cinnamon. Bundled, precious, guarded like a secret. It traveled by ship and by camel, through hands that never revealed where it truly came from, because the merchants who controlled the trade wanted it that way. For centuries, the origin of true cinnamon was one of the ancient world's best-kept secrets. Kings paid fortunes for it. Physicians prescribed it. It was, quite literally, used as currency.

That organic cinnamon — the real one, the one worth all that trouble — isĀ Cinnamomum verum. Ceylon cinnamon. And it's almost nothing like the cinnamon sitting in most American spice racks today.

What You've Probably Never Actually Tasted

Here's the truth: most "cinnamon" on grocery shelves is cassia: a harder, thicker, more aggressive cousin with a sharp, peppery bite. It's not wrong, exactly. It's just notĀ this.

Ceylon cinnamon is delicate where cassia is forceful. Sweet and warming where cassia is spicy and sharp. Snap open a stick and you'll see the difference immediately. Thin layers of bark are curled together like the pages of a tiny scroll, soft enough to grind yourself in a coffee grinder, nothing like the single thick, rough curl of cassia bark. The color tells the story too: a reddish brown rather than cassia's flat tan.

This is the cinnamon that made its way into apple pie, yes. But it's also the cinnamon melted into Mexican chocolate, folded into Middle Eastern lamb, brewed into Ayurvedic tonics, and infused into anointing oils in the Old Testament. It's a spice that has earned its place in sweet dishes and savory ones alike, in kitchens and temples, for thousands of years.

You don't have to choose between sweet and savory. This organic ceylon cinnamon never did.

Grown by Families Who've Never Once Been Treated Like a Supply Chain

Every stick of this cinnamon can be traced back to something most commercially bought cinnamon no longer often is: a relationship.

We source our organic, non-GMO cinnamon bark directly from cinnamon estates across Sri Lanka, and we grind it ourselves to protect its quality all the way to your kitchen. The farms behind it are small and family-owned, many of them partners of ours for more than a decade. In an industry where farmers are too often an afterthought, we've built our company the other way around: they're family first, suppliers second.

And the farming itself goes further than "sustainable." Sustainable just means doing no more harm. What these farms practice is regenerative. Soil gets richer with every harvest. Biodiversity expands rather than shrinks. Water is conserved rather than depleted. Carbon is pulled back into the earth instead of released into the air. It's agriculture that leaves the land better than it found it, cultivated according to ancient Ayurvedic principles meant to protect not just the crop, but itsĀ prana — its living energy.

No Shortcuts, No Additives, No Apologies

We don't add anti-caking agents to keep this cinnamon flowing freely in the jar. That means you might notice a lump or two forming over time. That's not a flaw — it's proof there's nothing in here except cinnamon. Every batch is processed and tested to FDA and World Health Organization safety standards, so purity is never a matter of trust alone.

From an Ancient Currency to Your Spice Rack

Physicians in the Middle Ages turned to Ceylon cinnamon to soothe a sore throat. Ancient Chinese and Indian healers built it into their most trusted remedies. Egyptians treated it as sacred. For two thousand years, civilizations across the world independently arrived at the same conclusion: this spice matters.

It still does. Grind it fresh over your morning oatmeal. Stir it into a pot of simmering chai. Fold it into a savory curry the way cooks in the Middle East have for generations. However you use it, you're using something that once traveled continents to reach a temple altar. And it's grown today by the same kind of hands that made it precious in the first place.

Species: Cinnamomum verum

Other names: sweet cinnamon, true cinnamon

Appearance: The thin, multi-layered bark of this Indian cinnamon is most often a reddish brown. The bark is curled in on itself as it is dried and cured. The ground Ceylon Cinnamon is light brown, with a slight tint of red.

Typically used: The dried bark is used whole or powdered, and the twigs and leaves are distilled into an essential oil.

Origin: Organic ceylon cinnamon is cultivated from the inner bark of the evergreen tree, Cinnamomum verum. Native to Sri Lanka (formerly called Ceylon), Bangladesh, Burma, and the south-eastern coast of India, the spice has been considered a gift fit for gods and has been traded for centuries.

Flavor: Sweet, warming, delicate (in contrast to Cassia Cinnamon, which is warming and somewhat spicy and/or peppery)

Aroma: Sweet and somewhat pungent

Culinary uses: Organic ceylon cinnamon is used in both sweet and savory dishes. It has been popularized in the United States as the perfect pairing for apples. These whole organic ceylon cinnamon sticks are soft enough to be easily ground in a coffee or spice grinder. In Mexico, Ceylon cinnamon is used in chocolate, and in the Middle East the spice can be found in savory meat dishes.

Other uses: Cinnamon is used in perfumes, cosmetics, cordials, potpourris, incense, tinctures, and essential oils.

Ceylon vs. Cassia: Cassia bark can be described as hard, thick, and rough in comparison to Organic Ceylon Cinnamon. Cassia is more tan than reddish brown. When dried, Cassia Cinnamon sticks appear as a single thick layer that curls in from two sides, whereas Ceylon Cinnamon has many layers that usually curl altogether.
