Sweet & Sour Shrimp (or Chicken) Marinade

Cook Time: 45 minutes

This marinade is absolutely fantastic for whipping up some delightful sweet and sour shrimp or chicken! The incredible natural tanginess of tamarind fruit not only adds a burst of flavor but also works wonders in tenderizing the chicken.

Just a friendly tip: when marinating shrimp or any other seafood, don't let it sit too long. The acidity in the tamarind might "cook" it before it hits the pan.

Ingredients:

MARINADE

7 TBSP Organic Tamarind Paste*
1/3 cup Manuka Honey*
2 cloves garlic
2 TBSP Organic Jaggery* (or brown sugar)
3 TBSP chili oil (or Organic Sesame Oil*)
1/2 tsp Himalayan Pink Salt*

PROTEIN

2 lbs shrimp or chicken

GARNISH

scallions
cilantro
Organic Sesame Seeds*

Instructions:

1. Mix all the ingredients for marinade together in a bowl. Whisk until sugar dissolves.
2. Toss shrimp in marinade, cover, and set at room temperature for 30 minutes. For chicken, marinate in the fridge for 1-4 hours.
3. When ready to cook, remove meat from marinade, and reserve the marinade in a small pan.
4. Bring the reserved marinade to a simmer and simmer for at lest 5 minutes.
5. Heat oil in a skillet and brown on one side of the shrimp or chicken before flipping.
6. Garnish with sesame seeds, scallions, and/or cilantro.
