Lemon Rice with Ghee-Roasted Peanuts is a popular South Indian dish because it's aromatic and tasty as well as easy. You just need a handful of ingredients that are staples of every Indian pantry, and it comes together quickly.
It's both basic and beautiful. All you have to do is mix cooked rice with a handful of ghee-roasted peanuts and spices tempered in ghee, and then drizzle freshly squeezed lemon over it all. Couldn't be any easier!
Indian Lemon Rice with Ghee-Roasted Peanuts
Ingredients
- 4 cups Organic Aged Basmati Rice, already cooked
- 3 tbsp Grassfed Organic Ghee
- pinch of the Best Hing Ever
- 5 tbsp peanuts
- 3/4 tsp Organic Brown Mustard Seeds
- 1/2 tbsp Organic Dried Ginger Granules
- 2 Organic Chipotle Morita Chili Peppers, chopped
- 20 Organic Curry Leaves
- 1/2 tsp Organic Lakadong Turmeric Powder
- 1/2 tsp salt, adjust according to taste
- 2 tbsp water
- 1 medium lemon
Instructions
- In a skillet, melt 1 tbsp of ghee over medium heat. Add peanuts and fry until golden, then remove from skillet.
- In the same skillet, melt remaining 2 tbsp of ghee over medium heat. Add a pinch of hing and stir until it blooms and becomes aromatic.
- Add mustard seeds, ginger granules, chopped chili peppers, and curry leaves to the skillet and cook for 30 seconds to a minute until it becomes aromatic.
- Add turmeric and salt to the skillet, then immediately pour in 2 tbsp of water and cook until it evaporates.
- Remove from heat. Mix your now tempered spices with your already cooked rice and the ghee-roasted peanuts.
- Drizzle with the juice of one lemon. Mix well. Taste the rice mixture and add more lemon juice or salt if necessary.
- Serve garnished with cilantro, peppers, or additional roasted peanuts and a side of yogurt.
