Cucumber Carrot Cilantro Raita in a green bowl

Cucumber, Carrot, and Tomato Raita

Cook Time: 5 minutes

Serve this delicious, cooling raita as side to biryani, parathas, or any spicy Indian meal. Enjoy as a snack with spicy chips and finger foods, too!

Ingredients:

2 cups yogurt, plain
1 small seedless cucumber (Persian cucumber), grated
1 cup carrot(s) peeled, grated or chopped
1/2 small tomato, finely chopped
1/4 cup scallions, chopped (optional)
Organic Cumin,* ground, to taste
Himalayan Pink Salt,* to taste
Tellicherry Extra Bold Black Pepper,* freshly ground, to taste
Cayenne Pepper,* to taste (optional)
cilantro, chopped
mint fresh leaves (optional)

Instructions:

1. In a mixing bowl, whisk the yogurt until smooth.

2. Add cucumbers, tomato, carrots and scallions.

3. Season with cumin, salt, pepper and cayenne to personal taste.

4. Serve garnished with cilantro and/or fresh mint leaves
