Ghee Roasted Chickpeas

These ghee roasted chickpeas (Chana Chaat) make a great snack or a fun addition to a meal. Try them over pizza, stuffed into pita, or served over rice or quinoa with a side of veggies.

Ingredients:

1.5 cups chickpeas freshly cooked or canned, rinsed and drained
2 Tbsp Organic Grassfed Ghee* or Garlic Ghee*
1 tsp Organic Coriander* ground
1/2 tsp Organic Cumin* ground
1/2 tsp Organic Kashmiri Red Chili Powder*
1/4 tsp Organic High Curcumin Turmeric Powder*
salt to taste
Tellicherry Extra Bold Black Pepper* freshly ground, to taste
cilantro garnish, optional
lemon juice freshly squeezed, optional

Instructions:

1. Preheat oven to 400 degrees F. Pat chickpeas dry with a paper towel — the drier they are, the crispier they’ll get. Set aside.

2. Melt ghee in a medium saucepan. Stir in cumin, coriander, Kashmiri red chili powder, turmeric, salt, and pepper.

3. Add chickpeas to spiced ghee, gently tossing until well-coated.

4. Spread chickpeas in a single layer on a baking sheet. Roast for 25–30 minutes, shaking the pan halfway through, until golden and crispy.

5. Serve warm, sprinkled with fresh cilantro or a dash of lemon juice if desired.
