Ghee: An Emergency Food in Times of Disaster

 

Ready.gov is a national public service campaign that encourages Americans to prepare for and respond to emergencies such as natural and man-made disasters. The organization offers helpful guidance on selecting appropriate foods to store as part of an emergency preparedness plan and recommends keeping at least several days’ supply of non-perishable food items on hand.

Shelf-stable foods that require little to no preparation are especially valuable during emergencies when electricity, refrigeration, and clean water may be limited. Ghee (clarified butter) can be a practical addition to an emergency food kit for several reasons:

Shelf stable: Properly prepared and stored ghee is generally shelf stable and does not require refrigeration when kept in a sealed container away from heat and light.

Ready to use: Ghee can be consumed as is and does not require additional cooking or water.

Calorie dense: As a fat, ghee provides concentrated calories, which can help meet energy needs when food options are limited.

Naturally occurring nutrients: Ghee contains naturally occurring fat-soluble vitamins such as vitamins A, D, E, and K (including small amounts of K2) in varying amounts.

Contains fatty acids: Ghee provides a mix of saturated and unsaturated fats, including small but nutritionally significant amounts of omega-3 and omega-6 fatty acids which are essential fatty acids obtained through the diet.”

No added salt: Plain ghee does not contain added sodium.

In addition to its practicality, ghee adds flavor and richness to simple emergency foods such as rice, oats, lentils, dried vegetables, or shelf-stable grains. During stressful circumstances, palatable foods can make meals more satisfying and easier to consume.

When assembling an emergency food kit, it is wise to include a variety of shelf-stable foods such as dried grains, canned or dried legumes, nut butters, shelf-stable proteins, dried or canned fruits and vegetables, and adequate water. Be sure to review packaging, storage instructions, and expiration dates to ensure optimal shelf life and food safety. Rotating stored items periodically helps maintain freshness.
