Organic Kitchari

Kitchari is a delicious stew of basmati rice and husked split mung beans that has been a staple in South East Asian cuisine for years. It is easy to cook, easy to digest, and is an excellent option when someone is sick or recovering from an illness.

Kitchari is cooked like oatmeal with salt and Indian spices added for additional flavor. Commonly used spices include:

  • Mustard seeds
  • Turmeric powder
  • Cumin seeds
  • Ginger
  • Fenugreek

Kitchari Spice MixFresh vegetables like potatoes, cauliflower, carrots, and peas can also be added to khichadi during cooking. It is often served with ghee (clarified butter), pickles, and other condiments and is considered a complete meal, especially for vegetarians.

Cooked Khichadi

Kitchari: An Indian Comfort Food

1 TBSP grassfed organic ghee
1 cup organic kitchari (rinsed)
3-1/2 cups water
1/2 teaspoon turmeric powder
Himalayan Pink Salt and pepper to taste

Prepare the kitchari by rinsing in a colander. Then, in a heavy-bottomed stockpot, melt the ghee. Add the washed kitchari and sauté for a couple minutes. Then, add the water, along with the turmeric. Bring to a boil, then reduce heat to low, and simmer partly covered for approximately 20 minutes or until it reaches the consistency of a stew. Add more water if needed. Stir occasionally. Pour in bowls and serve hot. Garnish with ghee and cilantro leaves.

Best Accompaniments: Ghee, yogurt, coconut flakes, fresh cilantro leaves, Indian pickle, pappadam, cilantro/mint chutney.

I have made other blends of dahl before, but this blend of rice and dahl is satisfying.  I have stirred in honey to make it a good breakfast, and the ease of preparation makes it a good quick meal any time.
