This rare variety of turmeric is a vibrant blue when fresh and appears similar to black pepper when dried. It has as a stronger taste than its golden sister. The flavor is unique and may overpower other spices, but luckily only a little is needed at a time. It is highly aromatic and potent due to a high concentration of naturally-occurring essential oils.
*We are just starting to work with black turmeric, and we don’t have information about its curcumin content. However, as you know, curcumin is only one of the active components of turmeric. The entire root has hundreds of such components, many of which haven’t been fully researched yet.
Bombay Chaat Masala is used to season fruit and salads. The flavor is a little salty, with a bright and lighly sweet-tart element from the dried green mangos (amchoor). Sprinkle lightly on fruits like apples, mango, and green papaya. Toss a little with green salads, or use it on the rim of a tropical drink. Cumin Coriander Fennel tea (CCF tea) is a classic Ayurvedic tea that gently enkindles the agni (digestive fire) and detoxifies. It is suitable for all three constitutional types--vata, pitta, and kapha. Add 1 teaspoon CCF tea to one cup of water. Bring to a boil and simmer for 5 minutes on low heat. Strain and serve. Hing is made from the dried resin of a giant fennel-family plant. It is essential to Indian cooking and pleasantly aromatic and pungent raw. It becomes mellow and garlicky when cooked in ghee. Hing is a wild-crafted product and organic certification is not available. Other spices are cultivated by farmers and go through the organic certificate process. This really is the best and most aromatic hing that you can buy. IT IS VERY POTENT! USE ONLY A PINCH. This raw hing powder is 8-10 times stronger than most compound hing powder sold in grocery stores.
