Fenugreek Seed

Species: Trigonella foenum-graecum

Other names: Greek hay, Greek clover, alholva, methi, medhika

Appearance: Fenugreek is a small, stone-like seed of a yellow brown color

Typically used: Whole or ground

Origin: Fenugreek originated in India and the Southern European/Mediterranean regions. Today, it is also cultivated in Ukraine and China.

Flavor: Fenugreek has a powerful and bittersweet maple-like flavor, with a bitter aftertaste.

Aroma: The smell is penetrating and becomes spicy when ground.

Culinary uses: Roasting fenugreek helps to decrease the bitterness and enhance the flavor of the spice. Fenugreek is a major component of curry powders and Panch phoron, the Indian spice mixture. The spice is a common addition in the preparation of mango chutney and pickles, for a tangy aroma. Fenugreek is used in many Indian daal and vegetable dishes. The seeds can also be made into a tea, and used as a coffee substitute.
