Khichadi: An Indian Comfort Food

1 cup organic khichadi
3 1/2 cups water
1/2 teaspoon turmeric powder
Himalayan Pink Salt and pepper to taste

In a stockpot, combine all the ingredients. Bring to a boil, then reduce heat to low, and simmer partly covered, until the water has been absorbed, stirring occasionally. Pour in bowls and serve hot. Serves 3.

Best Accompaniments: Ghee, yogurt, coconut flakes, fresh cilantro leaves, Indian pickle, papadum, cilantro/mint chutney.
